Ingredients:

  • 1 Small seedless watermelon remove rind, cut into 1-inch cubes
  • 3 Tbsp Fresh lime juice
  • 3 Tbsp Extra virgin olive oil
  • 1/4 cup Fresh mint sprigs finely chopped
  • 4 oz. Feta cheese
  • Salt and pepper to taste (optional)

Instructions

  1. Combine all ingredients except the cheese in a bowl until evenly dressed

  2. Add cheese and lightly stir until integrated into salad

  3. Serve chilled
