Ingredients:
- 1 Small seedless watermelon remove rind, cut into 1-inch cubes
- 3 Tbsp Fresh lime juice
- 3 Tbsp Extra virgin olive oil
- 1/4 cup Fresh mint sprigs finely chopped
- 4 oz. Feta cheese
- Salt and pepper to taste (optional)
Instructions
- Combine all ingredients except the cheese in a bowl until evenly dressed
- Add cheese and lightly stir until integrated into salad
- Serve chilled
