This Brown Rice and Veggie Salad is a protein and nutrient powerhouse recipe! It’s a flavorful dish and when you get all the ingredients together, the dish couldn’t be simpler to make. It’s a quick way to get most of your helping of veggies in one sitting! It’s gluten free too and dairy free as well.

Servings: 6
Ingredients:
- 2 1/2 Cups Cooked brown rice
- 1/2 Cup Chopped carrots
- 1/2 Cup Chopped seedless cucumber
- 1/2 Cup Sliced radishes
- 1/2 Cup Chopped celery
- 1/2 Cup Chopped red onion
- 1 Cup Fresh peas
- 1/4 Cup Chopped basil
- 1/4 Cup Chopped mint
- 1/4 Cup Chopped flat-leaf parsley
- 1 Tbsp honey
- 2 Tbsp Extra virgin olive oil
- 3 Tbsp Lemon juice
- 1 Tsp Dijon mustard
- 1/2 Tsp Red pepper flakes
- 1/4 Tsp Sea salt
Instructions
- Put all ingredients into a large bowl and toss gently to combine.
- Serve or chill.
