Mediterranean Meatloaf
Ingredients:
- 1 egg lightly beaten
- ¼ cup finely chopped cilantro
- 4 cloves garlic minced
- ¼ cup onion finely chopped
- ¼ cup sundried tomatoes finely chopped
- ¼ cup pitted black olives
- ¼ cup of pitted green olives
- 3 Tbsp. ground flax seeds (flax meal) mixed with 3 Tbsp.
- 1 pound of grass fed and grass finished ground beef
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp Himalayan sea salt
- ¼ tsp black pepper
- 4 halves of sundried tomatoes
- 1 bag 8oz of small red potatoes/sweet potatoes (or recommend substituting a veggie like Brussel sprouts or broccoli or cauliflower etc.) each cut into bite sized pieces
- 1 whole onion chopped into bite sized pieces
- 2 tsp avocado oil
- 1 tsp dried thyme crushed
- 1 bag 8oz of fresh green beans
Directions:
- Preheat oven to 350°
- If you are using a metal baking pan line the bottom with parchment paper. For glass or porcelain pans pour a little oil in the bottom of the pan.
- In a large bowl combine the egg, cilantro, finely chopped onion, 2 cloves of minced garlic, ¼ cup of finely chopped sundried tomatoes, flax meal, ground beef, turmeric, cumin, salt and pepper.
- Mix well. Shape meat into four round loaves and place in ½ of the prepared baking pan.
- Cover each mini meatloaf with a halved sundried tomato.
- Wash and dry your large bowl. Place in the chopped onions, potatoes, oil, green beans, the rest of the garlic, black olives and thyme. Add a pinch of salt. Mix well.
- Place vegetable mixture in the other half of the prepared baking pan.
- Bake for 40-45 minutes or until loves reach 160°F and vegetables are tender.
- Allow the Mediterranean Meatloaf to rest about 5 minutes before serving. Enjoy!

This dish is also great with grass-fed and finished ground lamb!
